Mocha Chocolate Chip Cake

- 1/2 cup hot strong brewed coffee
- 1/4 cup finely ground coffee
- 2 T instant coffee granules
- 2 cups flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1/4 tsp salt
- 1 cup vegetable oil
- 1 3/4 cups sugar
- 3 eggs
- 2 tsps vanilla
- 1/2 cup semisweet chocolate chips
Instructions
- Preheat oven to 350 degrees. Line a 9x5-inch metal loaf pan with greased, parchment paper.
- In a bowl, combine brewed coffee, finely ground coffee and instant coffee, stirring well. Set aside to cool.
- In a medium bowl, combine flour, baking powder, cinnamon, and salt.
- In a large bowl, using electric mixer, beat oil, sugar, and eggs until smooth. Add cooled coffee mixture and vanilla, beating well. Add flour mixture and beat on medium-high speed for 10 seconds, just until blended.
- Pour batter into prepared pan. Sprinkle chocolate chips over top, lightly pressing some of the chips into the batter. Bake for 65 to 70 minutes.
- Let cool in pan on rack for 15 minutes. Remove cake from pan and let cool completely on rack.
