- 2 cups plus 2 tablespoons all-purpose flour
- 1 1/2 cups granulated sugar
- 4 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 cup solid vegetable shortening, softened
- 1 cup milk
- 1 1/4 teaspoons vanilla extract
- 4 large egg whites
- 1 tablespoon superfine sugar
Instructions
- Preheat oven to 350F. Grease a 10-inch cast-iron skillet, 10-inch casserole, or a 10-inch round cake pan. Dust with flour and tap out excess.
- Mix together flour, sugar, baking powder, and salt.
- Beat together shortening, milk, and vanilla at medium speed. Gradually beat in flour mixture at low speed; beat for 2 minutes.
- Beat in egg whites. Pour batter into prepared pan.
- Bake cake until a toothpick inserted in center comes out clean, 40 to 45 minutes. Transfer pan to a wire rack to cool slightly.
- Turn cake out onto rack. Sprinkle top of cake with superfine sugar. Serve warm.
