    Pineapple Coconut Cupcakes

    List of Ingredients


    • 1/2 C Flaked coconut
    • 1/2 C Butter
    • 1 C Crushed pineapple
    • 2 Eggs
    • 2 Tsp Baking powder
    • 1/4 C Water
    • 3/4 Tsp Vanilla
    • 1 C Sugar
    • 2 C Flour
    • 1/2 Tsp Salt
    • -----FROSTING-----
    • 3 Oz Cream cheese
    • 1 Tbsp Milk
    • 1 Pinch Salt
    • 2 1/2 C Confectioners' sugar
    • 1/4 Tsp Vanilla


    Instructions


    1. Combine coconut and water. Let stand while mixing the cake.

    2. Cream butter, sugar, salt, and vanilla. Add eggs one at a time and beat well. Add coconut; mix well.
    3. Add dry ingredients and pineapple alternately; mix well.
    4. Bake in cupcake tins, 350 F, 15 to 20 minutes.

    5. Frosting:
      Combine until smooth.
