Quick And Easy Pumpkin Pie Squares
List of Ingredients
- 1 pkg 2 layer-size yellow cake mix
- 1/2 cup butter, melted & cooled
- 3 eggs
- 1 (16 oz) can pumpkin
- 1 (5 oz) can evaporated milk (2/3 cup)
- 1/2 cup packed brown sugar
- 2 1/2 tsp pumpkin pie spice
- 2 T granulated sugar
- 2 T butter, softened
- 1 tsp ground cinnamon or pumpkin pie spice
- whipped cream
Instructions
- In large bowl, combine dry cake mix, 1/2 cup butter and 1 of the eggs, beating until combined. Reserve 1 cup of mixture.
- Spread remaining mixture in ungreased 13 x 9 x 2 inch baking pan, pressing to form even crust.
- For filling, in medium bowl, beat together remaining eggs, pumpkin, evaporated milk, brown sugar and pumpkin pie spice. Pour mixture over prepared crust.
- Combine reserved 1 cup cake mixture, granulated sugar, 2 T butter and cinnamon. Dot evenly over pumpkin filling.
- Bake in 350 degree oven for 45 to 50 minutes or until knife inserted near center comes out clean. Cool in pan on wire rack. Cut into squares. Serve topped with whipped cream. Store in refrigerator. Makes 12 servings.
