Ricotta Pie

- 2 lbs fine ricotta
- 1 cup sugar
- 4 to 6 eggs depending on size
- 1 pkg (6 to 8 oz) chocolate chips
- 1 tsp vanilla
- 2 pie crusts
Instructions
- Whip ricotta cheese with beater until smooth.
- Gradually add sugar, then eggs; one at a time. Watch consistency, don't make too watery.
- Add chocolate chips (mini's are best) and vanilla. Pour into unbaked pie crust.
- Put criss-cross strips of 2nd pie crust on top.
- Bake at 350 degrees for 45 minutes. Check after 30 minutes to see how brown. If too brown lower heat. At end of baking time, open oven door, turn off oven, leave pie in oven until cool.
