    Cashew Butter Crunch

    List of Ingredients


    • 1 cup sugar
    • 1 cup butter
    • 1 T light corn syrup
    • 1 1/2 cups salted cashew pieces*


    Instructions


    1. In 2 quart saucepan combine sugar, butter and corn syrup. Cook over low heat, stirring constantly, until candy thermometer reaches 290 degrees. Remove from heat; stir in cashews.
    2. Spread to 1/4" thickness on waxed paper-lined 15x10x1-inch jelly roll pan. Cool completely; break into pieces.


    Final Comments


    Makes 1 1/4 lbs (2 dozen pieces)

    *Substitute 1 1/2 cups of your favorite salted nuts.
