Eggplant Neopolitan
List of Ingredients
- 1 lb fresh spinach
- 1/2 cup water
- 1/2 cup onion, chopped
- 1 cup fresh mushrooms, chopped
- 1/2 cup butter
- 5 eggs, divided
- 2 cups cottage cheese
- 1 cup Swiss cheese, grated
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/8 tsp nutmeg, ground
- 1/8 tsp liquid hot pepper sauce
- 1/8 tsp garlic powder with parsley
- 1 eggplant, peeled, sliced
- 1 T oil
- 15 oz ricotta cheese
- 1 cup Monterey Jack cheese, grated
- 15 oz prepared tomato sauce
- 1 tsp Italian seasoning
Instructions
- In saucepan over medium heat, cook spinach in water until wilted; drain well.
- Saute onion and mushrooms in butter in skillet until tender.
- In large bowl combine spinach, onion/mushroom mixture, and 3 eggs; mix well. Add cottage cheese, Swiss cheese, salt, pepper, nutmeg, hot pepper sauce, and garlic powder; set aside.
- Meanwhile, in skillet saute eggplant slices in oil until lightly browned; drain.
- In medium bowl, beat 2 eggs then add ricottage cheese, montery jack cheese, and parmesan cheese; mix well.
- Preheat oven to 375 degrees.
- Grease 9 x 13" baking dish. Combine tomato sauce and Italian seasoning and spread over bottom of prepared dish. Alternately layer eggplant, cheese mixture, and spinach mixture; repeat.
- Bake uncovered for 30 minutes.
