Chocolate Mint Meringue Cheesecake

- 1 cup chocolate wafer crumbs
- 2 T sugar
- 3 T margarine, melted
- 24 oz cream cheese, softened
- 2/3 cup sugar
- 3 eggs
- 1 cup mint chocolate chips
- 1 tsp vanilla
- 3 egg whites
- 7 oz marshmallow creme
Instructions
- Combine chocolate wafer crumbs, 2 T sugar, and melted margarine; press onto bottom of 9" springform pan. Bake at 350 degrees for 10 minutes.
- In bowl, combine softened cream cheese and 2/3 cup sugar, mixing at medium speed with electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in mint chocolate chips and vanilla; pour over crust.
- Bake at 350 degrees for 50 minutes. Loosen cake from rim of pan; cool before removing from pan. Chill.
- Beat egg whites until soft peaks form. Gradually add marshmallow creme, beating until stiff peaks form. Carefully spread over top of cheesecake to edges. Bake at 450 degrees for 3 to 4 minutes or until lightly browned.
