- 1 1/4 cups salted pretzel crumbs
- 1 T sugar
- 1/2 cup butter, melted
- 2 (8 oz) pkgs cream cheese, softened
- 1/2 cup sugar
- 2 individual size envelopes instant Margarita mix
- 4 large eggs
- 1/3 cup tequila
- 1 tsp grated lime rind
- 1/2 tsp vanilla
- 2 (8 oz) cartons sour cream
- 1/4 cup sugar
- 1/2 tsp grated lime rind
- 1 T fresh lime juice
- Garnishes: lime slices, grated lime rind
Instructions
- Combine salted pretzel crumbs, sugar and butter; firmly press onto bottom and 1" up sides of 9" springform pan. Bake at 375 degrees for 6 to 8 minutes. Set prepared pan aside.
- Beat cream cheese at medium speed with mixer until fluffy; gradually add sugar and butter, mix, beating well. Add eggs, one at a time, beating after each addition. Stir in 1/3 cup tequila, 1 tsp grated lime rind and vanilla. Pour into prepared pan.
- Bake at 375 degrees for 25 to 30 minutes. Remove from oven; cool on wire rack 30 minutes.
- Combine sour cream and next 3 ingredeints; spread over top of cheesecake. Bake at 425 degrees for 10 minutes. Coll on rack.
- Cover and chill 8 hours.
- Garnish.
