Mini Blueberry Lemon Cheesecakes

- 24 vanilla wafers, ground
- 3 T melted butter
- 3 T sugar
- 1 cup blueberries
- 2 (8 oz each) whipped cream cheese, softened
- 1/4 cup sugar
- 1/2 cup prepared lemon curd
- 2 eggs
- whipped topping, blueberries and lemon slices, for garnish
Instructions
- Preheat oven to 325 degrees.
- In bowl, combine ground vanilla wafers and 3 T each melted butter and sugar. Divide mixture evenly among 12 paper-lined muffin cups; press to form crusts.
- In bowl of food processor, puree blueberries 1 minute. Spoon 1/2 tsp puree into each crust.
- In bowl of electric mixer, beat whipped cream cheese and 1/4 cup sugar 2 minutes. Beat in curd. Add eggs, 1 at a time, beating after each.
- Divide mixture evenly among muffin cups. Top with remaining blueberry puree; swirl.
- Bake 20 minutes, or until almost set in center. Cool completely.
- Garnish with whipped topping, blueberries, and lemon slices, if desired.
