    Mini Chocolate Mocha Cheesecakes

    List of Ingredients


    • 13 chocolate wafers, ground
    • 3 T sugar
    • 3 T melted butter
    • 2 containers (8 oz each) whipped cream cheese, softened
    • 1/3 cup sugar
    • 2 eggs
    • 1 T espresso power
    • 1 T water
    • 1 bar (4 oz) bittersweet chocolate, melted


    Instructions


    1. Preheat oven to 325 degrees.
    2. In bowl, combine wafers and 3 T each sugar and melted butter. Divide mixture evenly among 12 paper-lined muffin cups; press to form crusts.
    3. In bowl, beat whipped cream cheese, softened, and sugar 2 minutes. Add 2 eggs, 1 at a time, beating after each.
    4. In bowl, stir together 1 T espresso powder and 1 T water; stir into cream cheese mixture. Transfer 1/4 cup mixture to bowl; stir in 1 bar (4 oz) bittersweet chocolate, melted. Stir back into batter. Divide among muffin cups.
    5. Bake 18 minutes. Cool completely.
