Amaretto Cookies

List of Ingredients
- COOKIES:
- 1 1/2 cups (3 sticks) butter, softened
- 1 cup sugar
- 1/4 cup almond-flavored liqueur
- 3 cups old-fashioned or quick (but not instant) oats
- 2 cups all-purpose flour
- FROSTING:
- 12 oz chocolate chips
- 2 T shortening
Instructions
- Preheat the oven to 350 degrees.
- For the cookies, mix the butter and sugar until light and fluffy. Blend in the liqueur. Add the oats and fluor and mix well. Refrigerate 10 minutes.
- Shape the dough into balls and arrange on an ungreased baking sheet. Press into circles with the bottom a glass (it helps to flour the bottom of the glass each time you press). Bake for 10 to 12 minutes. Cool.
- For the frosting, combine the chocolate chips and shortening in a microwaveable bowl. Microwave, stirring occasionally, until the chips are melted and the mixture is smooth.
- Spread the chocolate on the back side of one cookie and top with another.
