Buttermilk Tea Cakes

- 1/2 cup butter, softened
- 3/4 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/4 cup buttermilk
- 2 cups flour
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°
- Cream the butter and sugar.
- Add the egg and vanilla and blend well.
- Dissolve the baking soda in the buttermilk. Add
to the creamed mixture and blend well.
- Stir together the flour and salt. Add to the creamed mixture and blend well.
- Dust the work surface and rolling pin very
generously with flour. Roll out the dough to
1/4-inch thick and cut with a biscuit or cookie
cutter 1 1/2 - 2 inches in diameter. Transfer the
cakes to a greased cookie sheet. Gather up the excess
dough and save it for re-rolling.
- Bake for 10-12 minutes, until golden. Transfer the cakes to wire racks to cool.
