    List of Ingredients


    • 1/2 cup butter, softened
    • 3/4 cup sugar
    • 1 egg
    • 1 teaspoon vanilla
    • 1 teaspoon baking soda
    • 1/4 cup buttermilk
    • 2 cups flour
    • 1/4 teaspoon salt


    Instructions


    1. Preheat oven to 350°

    2. Cream the butter and sugar.
    3. Add the egg and vanilla and blend well.
    4. Dissolve the baking soda in the buttermilk. Add
      to the creamed mixture and blend well.
    5. Stir together the flour and salt. Add to the creamed mixture and blend well.

    6. Dust the work surface and rolling pin very
      generously with flour. Roll out the dough to
      1/4-inch thick and cut with a biscuit or cookie
      cutter 1 1/2 - 2 inches in diameter. Transfer the
      cakes to a greased cookie sheet. Gather up the excess
      dough and save it for re-rolling.

    7. Bake for 10-12 minutes, until golden. Transfer the cakes to wire racks to cool.
