Recipe Introduction
Browning the butter lends a caramel flavor to the frosting of these cakelike cookies.
List of Ingredients
- 1 1/2 cups butter, softened
- 1 1/2 cups firmly packed light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 (8 oz) container sour cream
- 1 cup butterscotch morsels
- 3/4 cup butter
- 3 cups powdered sugar
- 2 tsp vanilla extract
- 1/4 cup milk
- Pecan halves (optional)
Instructions
- Beat 1 1/2 cups butter at medium speed with an electric mixer until creamy; gradually add brown sugar, beating until blended. Add eggs and 1 tsp vanilla, beating until blended.
- Combine flour, baking soda, baking powder, and salt; gradually add to butter mixture, beating well. Add sour cream, beating until blended. Stir in butterscotch morsels.
- Drop dough by heaping teaspoonfuls onto ungreased baking sheets. Bake at 400 degrees for 10 minutes. Cool 2 minutes on baking sheets; remove to wire racks to cool completely.
- Melt 3/4 cup butter in a saucepan over medium-low heat; cook 4 minutes or until butter is lightly browned. Pour butter into a large bowl; cool completely. Stir in powdered sugar and 2 tsps vanilla. Add milk, and stir until frosting is spreading consistency. Spread on cooled cookies; top each cookie with a pecan half, if desired.
