Coconut Dream Cookies

- 1/2 cup butter, softened
- 1/2 cup vegetable oil
- 2 eggs
- 1 cup sugar
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup coconut
- 1 1/2 cups oats
- 1 1/2 cups chocolate chips
Instructions
- Pre-heat oven to 350 degrees.
- In a large mixing bowl add butter, vegetable oil and eggs. Beat with an electric mixer until light and fluffy.
- Add sugars and vanilla, beating until well combined.
- Add flour, baking soda, baking powder, salt, coconut, and oats, beat until combined.
- Stir in chocolate chips.
- Using a medium size cookie scoop or rounded tablespoon, drop onto a greased or lined baking sheet about 2 inches apart.
- Bake for 12-14 minutes or until lightly browned. Remove from oven and cool for a few minutes on the cookie sheet before moving to a wire rack to cool.
