Georgia Peanut Butter Raspberry Cookies

- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup creamy peanut butter
- 1/2 cup unsalted butter, room temperature
- 1/2 cup sugar, plus more for rolling
- 1/2 cup light brown sugar, packed
- 1 large egg
- 1 1/2 tsp pure vanilla
- 3/4 cup seedless raspberry jam
Instructions
- Preheat oven to 375 degrees.
- In a small bowl, combine flour, baking soda, and salt; set aside.
- In a large bowl, cream together peanut butter, butter, sugar, and brown sugar. Add egg and vanilla, mix until light and fluffy.
- Gradually add flour mixture to butter mixture. Beat until combined.
- Roll dough into 1" balls. Roll balls in sugar. Place balls 3" apart on ungreased cookie sheet. Gently press thumb in center of each cookie.
- Bake in top half of oven until lightly browned, 8 to 10 minutes.
- Press thumb gently in center of each cookie, while warm, if deeper indentation is needed. Fill with 1/2 tsp of raspberry jam.
- Transfer to wire rack to cool.
