Giant Toffee Pecan Cookies

- 1 cup LAND O LAKES® Butter -- softened
- 3/4 cup firmly packed brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 tablespoon vanilla
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 package semi-sweet chocolate chips -- (12-ounce) (2 cups)
- 3/4 cup chopped pecans
- 2/3 cup English toffee bits
Instructions
- Heat oven to 350°F.
- Combine butter, brown sugar and sugar in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes).
- Add eggs and vanilla; continue beating until well mixed (1 to 2 minutes).
- Reduce speed to low; add flour, baking powder and salt. Beat until well mixed (1 to 2 minutes).
- Stir in chocolate chips, pecans and toffee bits by hand.
- Drop dough by 1/4-cupfuls 2 inches apart onto
greased cookie sheets. Bake for 11 to 16 minutes
or until edges are lightly browned. Let stand 2
minutes; remove from cookie sheets.
Final Comments
Yield: 20 cookies
TIP: Cookies will look underbaked in center but
will continue to brown while cooling.
