    Giant Toffee Pecan Cookies

    LAND O' LAKES GREAT AMERICAN COOKIE SWAP 1999


    List of Ingredients


    • 1 cup LAND O LAKES® Butter -- softened
    • 3/4 cup firmly packed brown sugar
    • 1/2 cup sugar
    • 2 eggs
    • 1 tablespoon vanilla
    • 2 1/4 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 package semi-sweet chocolate chips -- (12-ounce) (2 cups)
    • 3/4 cup chopped pecans
    • 2/3 cup English toffee bits


    Instructions


    1. Heat oven to 350°F.
    2. Combine butter, brown sugar and sugar in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes).
    3. Add eggs and vanilla; continue beating until well mixed (1 to 2 minutes).
    4. Reduce speed to low; add flour, baking powder and salt. Beat until well mixed (1 to 2 minutes).
    5. Stir in chocolate chips, pecans and toffee bits by hand.
    6. Drop dough by 1/4-cupfuls 2 inches apart onto
      greased cookie sheets. Bake for 11 to 16 minutes
      or until edges are lightly browned. Let stand 2
      minutes; remove from cookie sheets.


    Final Comments


    Yield: 20 cookies

    TIP: Cookies will look underbaked in center but
    will continue to brown while cooling.
