- 1 cup unsalted butter, room temperature
- 1/3 cup sugar
- 2 1/2 tsp pure vanilla
- 2 1/2 cups all-purpose flour
- 1 tsp salt
- 1 cup pecans, finely chopped
- 1/3 cup confectioners' sugar, for rolling
Instructions
- Preheat oven to 350 degrees.
- Using the bowl of an electric mixer fitted with a paddle attachment, mix butter, sugar, and vanilla on medium speed until creamy, about 3 minutes. Reduce speed to low, add flour, salt, and pecans mixing just until blended.
- Roll into 1" balls. Bake 1-inch apart on ungreased baking sheet until lightly browned around edges, about 15 minutes. Transfer wire rack to cool. Roll in confectioners' sugar.
- Store in airtight container.
