Snowmen Shortbread Cookies

Recipe Introduction
Here's our sugar cookie alternative for your cookie-baking pleasure. It's based on a shortbread cookie dough that's rolled out and cut into a snowman shape.

- 2 cups unsalted butter, softened
- 11/2 cups sifted powdered sugar
- 1 tablespoon vanilla
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 cups all-purpose flour
- 1 tablespoon finely shredded tangerine or orange peel
- Powdered Sugar Icing (optional; recipe follows)
- Gumdrops and colored candies (optional)
Instructions
- In a large mixing bowl, beat butter with an electric mixer for 30 seconds. Add powdered sugar, vanilla, baking powder and salt. Beat until combined, scraping sides of bowl occasionally. Beat in as much of the flour as you can with the mixer. Stir in tangerine peel and any remaining flour with a wooden spoon. Divide dough in half. If necessary, cover and chill dough in refrigerator 30 minutes or until easy to handle.
- On a lightly floured surface, roll half the dough at a time until about 1/4 inch thick. Cut dough into shapes using a 3- to 4-inch snowman-shaped cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
- Bake in a 350° oven about 12 minutes or until edges are firm and bottoms are very lightly browned. Transfer cookies to a wire rack and let cool. If you like, frost with Powdered Sugar Icing. While icing is still soft, decorate with candies and gumdrops, which have been placed on a sugared surface and flattened with a rolling pin, then cut into hats, scarves and/or mittens.

Powdered Sugar Icing: In a small bowl, stir together 2 cups sifted powdered sugar, 1/2 teaspoon vanilla and 2 tablespoons milk. Stir in additional milk, 1 teaspoon at a time, until the mixture is a desired consistency.
