Cook-Ahead Beef Meals
List of Ingredients
- 1 boneless beef chuck roast (3 to 4 lbs)
- 1 jar (12 oz) pepperoncini (mild salad peppers)
- 1 can (14 1/2 oz) beef broth
- 1 can (12 oz) beer
- 1 pkg (1 oz) Italian salad dressing mix
- 1 loaf French bread, thickly sliced
- 10 slices provolone cheese (optional)
Instructions
- Trim visible fat from roast. Cut roast, if necessary, to fit into slow cooker, leaving meat in as many large pieces as possible.
- Drain peppers; pull of stem ends. Add to slow cooker along with broth, beer and dressing mix; do not stir. Cover; cook on low 8 to 10 hours.
- Remove meat from sauce; shred with 2 forks. Return shredded meat to slow cooker; mix well.
- Serve on French bread slice, topped with cheese, if desired. Add sauce and peppers as desired.
