    Double Chocolate Bread Pudding

    • 2/3 cup fat free evaporated milk
    • 1-1/2 tablespoons sugar
    • 2 teaspoons unsweetened cocoa powder
    • 1/2 teaspoon vanilla extract
    • 2 large egg whites, lightly beaten
    • 1-3/4 cups cubed fresh bread
    • cooking spray
    • 1 tablespoon semisweet chocolate minichips


    Instructions


    1. Preheat oven to 325 degrees F.

    2. Combine milk, sugar, and cocoa in a medium bowl. Stir with a whisk until well blended. Add vanilla and egg whites; stir well. Add bread cubes, stirring until moistened.

    3. Coat 2 (6-ounce) custard cups with cooking spray. Spoon milk mixture evenly into prepared cups, and top evenly with minichips.
    4. Place cups in a 9-inch square baking pan. Add hot water to pan to a depth of 1 inch. Bake at 325 degrees F for 35 minutes or until firm.
