Harvest Pumpkin Bread Pudding

- Pumpkin Bread (find recipe in breads)
- 3/4 cup dried cranberries
- 6 eggs
- 3 cups milk
- 1 cup half-and-half
- 1/2 cup sugar
- 1 tsp vanilla
- 1/2 tsp ground cinnamon
- Caramel Sauce (recipe follows)
Instructions
- Cut pumpkin bread into 1/2" cubes. Allow to stand, uncovered, overnight to dry.
- Place half of dry pumpkin bread cubes in a 3 quart rectangular baking dish. Sprinkle with dried cranberries. Top with remaining bread cubes.
- Beat eggs, milk, half-and-half, sugar, vanilla, and cinnamon together in a mixing bowl. Pour egg mixture over bread cubes in dish. Press bread lightly with a spoon to coat with egg mixture.
- Bake in a 325 degree oven about 50 minutes. Cool slightly. Serve warm with a drizzle of Caramel Sauce.
Final Comments
Makes 10 to 12 servings
CARAMEL SAUCE: Stir 1/2 cup packed brown sugar and 1 T cornstarch together in a large saucepan. Stir in 1/4 cup water, 1/2 cup half-and-half, and 2 T light color corn syrup. Cook and stir till bubbly (mixture may appear curdled). Cook and stir 2 minutes more. Remove from heat; stir in 2 T butter and 1/2 tsp vanilla. Serve warm. Makes 1 cup.
