- 1 cup raw almonds
- 3/4 cup raw pecans
- 3/4 cup organic raisins
- 3/4 cup dried apricots
- 3/4 cup dates, chopped
- 1/4 cup fresh orange juice
- 1 cup shredded, unsweetened coconut
Instructions
- Pulse all ingredients in a food processor or blender until you have a coarse meal.
- Add 1/4 cup fresh orange juice and pulse until mixture sticks together.
- Shape into 1-inch balls and roll in shredded, unsweetened coconut. Place in mini cupcake liners.
