    Try this concept with Southwestern ingredients, too.


    List of Ingredients


    • 2 T lime juice
    • 2 T soy sauce
    • 2 T fish sauce
    • 2 cups bean sprouts
    • 1 cup shredded rotisserie chicken
    • 5 shiitake or button mushrooms, thinly sliced
    • 1 carrot, grated or cut into thin strips
    • 3 scallions, sliced lengthwise into matchsticklike pieces
    • 1 head fresh iceberg lettuce
    • 1 cup roughly chopped basil or cilantro
    • 1/2 cup chopped roasted peanuts
    • red pepper flakes (optional)


    Instructions


    1. In a bowl, blend lime juice, soy sauce and fish sauce.
    2. In a second bowl, mix bean sprouts, chicken, mushrooms, carrot and scallions. Pour lime mixture over the chicken mixture; toss to mix.
    3. Cut off the stem part of the iceberg lettuce and separate into leaves. Wash and dry thoroughly.
    4. To assemble wraps, take a whole lettuce leaf and place 1 to 2 heaping T of chicken filling in the center. Top with a sprinkling of fresh basil or cilantro, peanuts and, if desired, red pepper flakes. Wrap filled lettuce leaf burrito-style to eat.


    Final Comments


    Makes 10 to 12 wraps.
