Black Bean Cotija Quesadillas

Recipe Introduction
Cotija is a white Mexican cheese similar to Queso Fresco and Greek feta. Feel free to substitute if you cannot find Cotija in your market.
List of Ingredients
- 1 cup canned refried beans
- Two 8-inch flour tortillas
- 1 tablespoon extra-virgin olive oil
- 2 medium tomatoes, minced
- 1 clove garlic, minced
- 1/2 teaspoon cumin
- 1 teaspoon pepper
- 1 teaspoon salt
- 1/2 cup crumbled Cotija cheese
- 4 teaspoons sour cream (garnish)
Instructions
- Prepare tortillas: Preheat oven to 350 degrees F. Spread refried beans evenly over one tortilla on a baking sheet.
- Cook the filling: In a medium skillet, heat oil; sauté tomato and garlic with cumin, pepper, and salt until soft -- about 4 minutes. Spread on top of refried beans. Sprinkle with cheese.
- Bake and serve: Place second tortilla over the filled one and bake in the oven until golden -- 10 to 15 minutes -- taking care not to let the edges burn. Transfer to a cutting board and cut into wedges. Serve warm or at room temperature.
