Black Bean and Feta Tostadas

- 2 - 15 oz. cans Black Beans
- 1 Roma Tomato seeded and diced
- 2 Tbsp. fresh Mint minced
- 1/4 cup Radish finely diced
- 1 Tbsp. Extra Virgin Olive Oil
- 2 Tbsp. Lemon Juice
- 1/2 tsp. Salt
- 1/4 tsp. Black Pepper
- 4 Mission® Tostadas
- Romaine Lettuce shredded
- Feta Cheese crumbled
- Oil and Vinegar Dressing
Instructions
- Rinse and drain black beans and combine with the next seven ingredients in a bowl.
- Layer each tostada with one quarter of the bean mixture (about 3/4 cup). Top with lettuce and Feta cheese and drizzle with dressing.
