Chinese Noodles with Sesame

List of Ingredients
- 1 tsp red pepper flakes
- 1 tsp sesame oil
- 1/4 cup alfalfa sprouts
- 1/2 cup thinly sliced carrots
- 3 cloves fresh garlic, minced
- 1 tsp grated ginger
- 1/4 cup thinly sliced scallions
- 1/2 cup thinly sliced red peppers
- 1 Tbsp peanut butter
- 2 Tbsp low sodium soy sauce
- 2 cups cooked thin spaghetti noodles
Instructions
- In a small saucepan, combine peanut butter, soy sauce, sesame oil, garlic, and ginger. Bring to a boil and reduce heat. Simmer for 3 to 5 minutes.
- Combine remaining ingredients in a bowl and pour hot peanut-sesame dressing over vegetable and pasta mixture.
- Can be eaten immediately or chilled and served cold.
