Fried Rice

List of Ingredients
- 1 tablespoon olive oil
- 1 shallot, minced
- 1/2 red bell pepper, minced
- pinch salt
- 1 clove garlic, minced
- 2 cups cooked brown Basmati rice
- 1 large carrot, grated
- 1 teaspoon fresh ginger, grated
- 1 teaspoon rice vinegar
- 3 tablespoons soy sauce
Instructions
- In a large skillet, heat oil over medium-high heat. Add in shallot, red pepper, and salt. Heat for 7 minutes. Add in garlic, and cook for a minute more.
- Add in rice, carrot, and ginger. Saute until some of the rice starts to caramelize in the pan. Stir in vinegar and soy sauce. Serve.
