General Tso's Chicken

- 1 egg white
- 3 T cornstarch, divided
- 3 T soy sauce, divided
- 2 lbs fresh boneless, skinless chicken breasts, cut into 1" pieces
- 2 cups vegetable oil
- 2 green onions, trimmed and chopped
- 2 T chopped, seeded green chile peppers
- 1 T grated gingerroot
- 1 clove garlic, crushed
- 1/4 cup chicken broth
- 2 T sugar
- 1 1/2 tsp vinegar
- 1 tsp sesame oil
Instructions
- In a large bowl, combine egg white, 1 T cornstarch, and 1 T soy sauce. Stir in chicken pieces; refrigerate for 2 hours.
- After chicken has marinated, heat oil to 350 degrees in a large heavy saucepan. Fry chicken for 1 to 2 minutes or until crisp; drain on paper towel and set aside.
- Drain all but 2 T oil from the pan. Add green onions, chile peppers, gingerroot and garlic to pan. Cook over medium-high heat, stirring constantly, until fragrant, about 1 minute.
- In a small bowl, whisk together chicken broth and remaining 2 T cornstarch.
- To the pan, add chicken, sugar, remaining 2 T soy sauce, vinegar and cornstarch mixture. Remove from heat and stir in sesame oil. Serve hot.
