Island Beans and Rice

- 2 1/2 cups water
- 1 cup brown rice, uncooked
- 1 tsp vegetable oil
- 1 cup onion, chopped
- 3 large garlic cloves, crushed
- 8 oz-can tomato sauce
- 16 oz-can kidney beans, rinsed and drained
- 1 1/2 tsp red wine vinegar
- 2 oz-jar sliced pimientos, drained
- 1/4 tsp dried thyme
- 1/4 tsp dried oregano
- 1/8 tsp pepper
Instructions
- Bring water to a boil in a medium saucepan. Add rice. When water boils again, reduce heat to low, cover, and simmer 40 to 45 minutes, until water has been absorbed. Remove from heat and let stand covered, 5 minutes. Fluff rice with a fork before serving.
- While rice is cooking, heat oil in a large nonstick skillet over medium heat. Add onion and garlic. Cook, stirring frequently, 5 minutes. Add tomato sauce, kidney beans, red wine vinegar, pimientos, thyme, oregano and pepper. When mixture boils, reduce heat to medium-low, cover, and simmer 15 minutes. Serve over rice.
