Orange Beef and Broccoli Stir-Fry

Serve the stir-fry over brown or white rice, or try buckwheat noodles for a different flavor and texture.
List of Ingredients
- 1/4 cup low-sodium beef broth or water
- 1 T soy sauce
- 1 T lemon juice
- 2 tsp cornstarch
- 1 T vegetable oil
- 1 lb top round London broil, cut into strips
- 1 (10 oz) pkg frozen broccoli spears, thawed and patted dry
- 2 T grated orange zest
- 1/4 cup fresh orange juice
- salt and pepper
Instructions
- Whisk together broth, soy sauce, lemon juice and cornstarch in a bowl; set aside.
- Warm oil in a wok or large skillet over medium-high heat until hot. Add beef, turn heat to high and cook, stirring constantly, until no longer pink, 2 to 3 minutes.
- Add broccoli and cook, stirring, until warmed through, about 2 minutes.
- Stir in reserved sauce, orange zest and juice. Cook, stirring constantly, until sauce is thickened, about 2 minutes. Season with salt and pepper.

*BE FRESH: Replace the frozen broccoli with fresh; cook it in boiling salted water for 2 minutes first.
*GET CREATIVE: Toss in chopped fresh ginger, sliced scallions, strips of red and yellow bell peppers or slivered snow peas before serving to dress up the dish.
INTENSIFY THE FLAVOR: If time permits, marinate the beef overnight in a mixture of orange zest, chopped fresh thyme, a crushed clove of garlic and olive oil. Pat the meat dry before starting to cook the stir fry.
