Polenta with Sausage & Mushrooms

List of Ingredients
- 1 pkg ground turkey sausage
- 2/3 cup chopped pecans
- 4 T chopped onions
- 1 1/2 cups sliced fresh shiitake mushrooms, stems discarded
- 3/4 cup chicken broth
- 2 pkgs (12 oz each) prepared polenta, each sliced into 12 rounds
- 2 T melted butter or olive oil
- 3/4 cup crumbled goat cheese
- 2 T chopped fresh sage
Instructions
- Preheat oven to 350 degrees.
- In large skillet, toast pecans over medium heat until fragrant; remove nuts and set aside.
- In same skillet, combine sausage, onions, mushrooms and sage over medium high-heat until sausage is cooked thoroughly. Add broth; cover and cook 1 minute. Uncover, raise heat; boil until liquid is reduced by half. Remove from heat and keep warm.
- On a non-stick baking sheet, brush polenta slices with butter or oil. Bake 15 minutes, then broil 4" from heat until golden.
- To serve, arrange polenta on plate, top with sausage mixture and sprinkle with goat cheese and nuts.
