    Recipe Introduction


    This recipe has everything you love about lasagna, except the work. Simplify preparation even furthur by using packaged cooked soy sausage instead of Italian sausage; simply warm it in the microwave according to package directions, and skip Step 2.


    List of Ingredients


    • 1 lb rigatoni, penne or other tube-shaped pasta
    • 2 sweet Italian sausage links, casings removed, crumbled
    • 1 (26 oz) jar marinara pasta sauce
    • 1 cup part-skim ricotta cheese
    • 1/4 cup (1 oz) freshly grated Parmesan cheese
    • 2 T chopped fresh Italian parsley
    • 1/2 tsp freshly ground pepper


    Instructions


    1. Cook rigatoni in large pot of boiling salted water according to package directions; drain.
    2. Meanwhile, heat large nonstick skillet over medium-high heat until hot. Add sausage; cook, stirring to break up meat, 3 to 5 minutes or until no longer pink. Place on plate; remove and discard drippings in skillet.
    3. Return sausage to skillet; add marinara sauce. Bring to a simmer over medium heat.
    4. Meanwhile, in large bowl, stir together ricotta cheese, Parmesan cheese, parsley and pepper. Toss drained rigatoni with ricotta mixture. Place in serving bowl; top with sauce.
