Recipe Introduction
This sizzling steak fajita recipe will have you coming back for more. Simple yet tasty.
List of Ingredients
- 2 T fresh lime juice
- 6 cloves of garlic, minced
- 1 bottle of beer
- 1 1/2 tsp chili powder
- 1/4 cup brown sugar, packed
- 1 tsp ground cumin
- 1 tsp oregano leaves
- 3 green onions, finely chopped
- 1 jalapeno, seeded, and minced
- 3/4 tsp sea salt
- 1/3 cup olive oil
- 1 T fresh cilantro, chopped (optional)
- 1 to 1 1/2 lbs skirt steak, trimmed of fat, figure 1/4 to 1/3 lb per person
- 1 large or 2 medium yellow onions, peeled and cut in half and thinly sliced
- 2 large bell peppers, one green and one yellow or red, seeded and cut into thin slices
- 6 to 8 flour (8") or corn tortillas
- Condiments:
- guacamole
- 3/4 lb of shredded mild cheddar cheese
- pint of sour cream
- salsa
Instructions
- Take a plastic ziplock bag and add the first 12 ingredients and mix them well. Then add the steak. Don't slice the meat; large pieces are easier to grill. Place the bag in the refrigerator overnight.
- Take meat out of refrigerator to bring to room temp. Place onion and bell peppers in a bowl and toss with 1 T olive oil.
- Heat grill. Place steak on grill.
- Add a teaspoon or 2 of olive oil to a cast iron skillet and heat on high. When the pan is hot, add the bell pepper and onion. Add a sprinkle of sea salt. Cook till veggies are translucent. Stir occasionally but let them brown a bit. Keep warm in the pan.
- When steak comes off grill, let it rest on cutting board while you heat tortillas either in oven or microwave.
- Slice steak into thin strips across the grain and place in warmed dish or bowl. Serve with peppers, onions, tortillas, and condiments.
