- 2 8 - 10 oz Snapper filets--skirts on
- Cajun Injector Creole Butter Marinade
- Cajun Shake seasoning
- Cajun Injector Stove-Top Smoker with Hickory Smoking Chips
Instructions
- Prepare smoker using instructions provided.
- Wrap Snapper filets in plastic wrap.
- Inject with marinade using 1 1/2 to 2 ounces of marinade per pound of meat.
- Remove plastic wrap.
- Sprinkle lightly with Cajun seasoning.
- Place fish on smoker rack, skin side down.
- Smoke for 20 minutes over medium heat.
