Honey Mustard Crusted Salmon

Recipe Introduction
Roasting at high heat keeps the fish moist and flavorful. The combination of honey mustard and whole mustard seeds produces a lovely hot-sweet mustard flavor. Salmon steaks can be substituted for fillets.
List of Ingredients
- 1 (1 3/4 to 2 lb) salmon fillet
- 1/4 cup honey mustard
- 2 T butter, melted
- 2 T chopped fresh dill
- 1 T lemon juice
- 1 tsp whole mustard seeds, lightly crushed*
- 1/4 tsp freshly ground pepper
- lemon wedges
- dill sprigs
Instructions
- Heat oven to 475 degrees. Grease rimmed baking sheet. Place salmon, skin-side down, on baking sheet. In small bowl, stir together honey mustard, butter, chopped dill, lemon juice, mustard seeds and pepper. Spread over salmon.
- Bake salmon 10 to 12 minutes or until fish just begins to flake. Heat broiler. Broil 3 to 4 inches from heat 1 minute or until lightly browned.
- Slice salmon into 6 pieces; garnish with lemon wedges and dill sprigs.

*To crush mustard seeds, place in heavy resealable plastic bag; press with flat side of meat mallet.
