Lemon-Spiced Salmon Steaks

Recipe Introduction
The lemony marinade provides a nice foil for the richness of the salmon, without being overpowering. After removing the skin from the steak, make sure to scrape off the grayish-brown fat between the skin and the fish; it sometimes has a fishy taste. Garnish the salmon with green onions thinly cut on the diagonal or a spiral of lemon peel. Serve it with a horseradish mayonnaise.
List of Ingredients
- 1/3 cup white wine
- 4 T vegetable oil, divided
- 2 T orange juice
- 1 T lemon juice
- 1 green onion, chopped
- 2 T grated lemon peel
- 1 tsp ground allspice
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
- 4 (8 oz) salmon steaks (1-inch thick)
Instructions
- In small bowl, stir together wine, 2 T of the oil, orange juice, lemon juice, green onion, lemon peel, allspice, salt, and pepper.
- Place salmon in glass baking dish. Pour marinade over salmon; refrigerate 20 minutes, turning once.
- Heat grill. Remove salmon from marinade; reserve marinade. Gently blot salmon with paper towel; brush with remaining 2 T oil.
- Place salmon on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Grill 7 to 10 minutes or until salmon just begins to flake, turning once and basting occasionally with reserved marinade during first 7 minutes of grilling.
