Marinated Fish Lettuce Wraps

List of Ingredients
- 1 lb tilapia
- juice of 2 lemons
- 1/4 cup olive oil
- 2 tsp each of salt and pepper
- 2 tsp minced garlic
- 2 T Dijon mustard
- 1 T red wine vinegar
- 1 tsp red pepper flakes
- 1 T flour
- 2 tsp pureed adobe sauce
- 1 cup real mayo
- 4 oz plain yogurt
- 1 tsp garlic powder
- 1 T chopped cilantro
- head of butter leaf lettuce
- 1 bag pre-chopped coleslaw mix
Instructions
- Combine the lemon juice, olive oil, 1 tsp salt and pepper each and the remaining 4 ingredients in a large Ziploc bag and marinate the fish for a good 2-4 hours.
- Meanwhile, mix together in a small bowl the mayo, yogurt, adobe sauce, garlic powder, and cilantro and set aside.
- Melt 1 T butter in a large cast-iron skillet and dredge the fish in the flour. Cook for approximately 6-8 minutes, depending on the size of the fillets or fillet. Serve in a butter leaf lettuce with a serving of the sauce and a heap of the coleslaw mix.
