    List of Ingredients


    • 3 lb Elk roast (hindquarter recommended)
    • 1 lb Bacon slices
    • 1 16 oz jar Cajun Injector Creole Garlic Marinade
    • 2 tbsp Louisiana Hot Sauce
    • 2 tbsp Cajun Injector Cajun Shake
    • 10 toothpicks


    Instructions


    1. Inject roast with Creole Garlic marinade.
    2. Rub roast with hot sauce, then sprinkle with Cajun Shake.
    3. Wrap completely with bacon and secure with toothpicks.
    4. Place in smoker and cook until an internal temperature of 120 degrees is reached.
