- 3 lb Elk roast (hindquarter recommended)
- 1 lb Bacon slices
- 1 16 oz jar Cajun Injector Creole Garlic Marinade
- 2 tbsp Louisiana Hot Sauce
- 2 tbsp Cajun Injector Cajun Shake
- 10 toothpicks
Instructions
- Inject roast with Creole Garlic marinade.
- Rub roast with hot sauce, then sprinkle with Cajun Shake.
- Wrap completely with bacon and secure with toothpicks.
- Place in smoker and cook until an internal temperature of 120 degrees is reached.
