    Butter Pecan Ice Cream

    List of Ingredients


    • 1 cup coarsely chopped pecans
    • 1/2 cup granulated sugar
    • 2 T butter
    • 4 cups half-and-half or light cream
    • 2 cups packed brown sugar
    • 4 tsp vanilla
    • 4 cups whipping cream


    Instructions


    1. Combine pecans, granulated sugar, and butter in a heavy 8" skillet. Heat over medium heat, stirring constantly, for 6 to 8 minutes or till sugar melts and turns a rich brown color. Remove from heat and spread nuts on a buttered baking sheet or foil; separate into clusters. Set aside and allow to cool completely. Break clusters into small chunks.

    2. Comine half-and-half or light cream, brown sugar, and vanilla in a large bowl; stir till sugar is dissolved. Stir in pecan chunks and whipping cream. Freeze in a 4 or 5 qt ice cream freezer according to manufactuere's directions. Ripen 4 hours.



    Final Comments


    Makes about 3 1/2 quarts.
