Cardamom Gelato

List of Ingredients
- 4 egg yolks
- 1 cup sugar
- 3 cups whole milk
- 1 1/2 tsps cardamon
- 1 tsp cinnamon
Instructions
- Whisk the egg yolks with the sugar in a bowl until thick; set aside.
- Over medium heat, bring the milk, cardamom and cinnamon to a simmer. Cook for 10 minutes; remove from heat and let sit for 10 minutes.
- Strain into a clean bowl; stir into the egg mixture. Return the whole mixture to the saucepan. Cook on low, but don't boil, until thick.
- Cool to room temperature. Cover and refrigerate overnight.
- Process in an ice-cream maker following machine directions.
