Lime Gelato

List of Ingredients
- 1 1/3 cups sugar
- juice and zest of 6 limes, divided
- 6 egg yolks
- 1 cup heavy cream
- 1/8 tsp salt
- 2 1/2 cups whole milk
- 1 1/2 tsps vanilla
Instructions
- Place the sugar and lime zest in a bowl; set aside.
- In a saucepan, stir together the egg yolks, cream and salt; simmer. Add the sugar and lime zest and lime juice to the hot mixture. Stir until sugar dissolves. Remove from heat.
- Meanwhile, in a separate saucepan, heat whole milk. Whisk the hot milk into the egg yolk mixture. Stir until it's slightly thick and coats the back of a wooden spoon, about 5 minutes.
- Pour into a bowl and add vanilla. Cover with plastic wrap to prevent a skin from forming. Cool in refrigerator.
- Process in an ice-cream maker following machine directions.
