    Lime Gelato

    List of Ingredients


    • 1 1/3 cups sugar
    • juice and zest of 6 limes, divided
    • 6 egg yolks
    • 1 cup heavy cream
    • 1/8 tsp salt
    • 2 1/2 cups whole milk
    • 1 1/2 tsps vanilla


    Instructions


    1. Place the sugar and lime zest in a bowl; set aside.

    2. In a saucepan, stir together the egg yolks, cream and salt; simmer. Add the sugar and lime zest and lime juice to the hot mixture. Stir until sugar dissolves. Remove from heat.

    3. Meanwhile, in a separate saucepan, heat whole milk. Whisk the hot milk into the egg yolk mixture. Stir until it's slightly thick and coats the back of a wooden spoon, about 5 minutes.

    4. Pour into a bowl and add vanilla. Cover with plastic wrap to prevent a skin from forming. Cool in refrigerator.

    5. Process in an ice-cream maker following machine directions.
