List of Ingredients
- 2 lbs fresh zucchini squash and/or yellow squash
- 2 small onions, sliced
- water
- 1/4 cup salt
- 2 cups sugar
- 1 tsp celery salt
- 1 tsp tumeric
- 2 tsps mustard seeds
- 3 cups cider vinegar
Instructions
- Either slice squash or cut into spears. Place squash and onions in large pot. Cover with water. Add salt. Let mixture stand 2 hours.
- Drain vegetables. Place remaining ingredients in saucepan. Bring to boil. Pour over squash and onions in large pot. Let stand 2 hours.
- Bring to boil. Heat 5 minutes. Pack squash and onions into sterilized jars. Pour hot brine over them. Adjust lids. Process in boiling water bath 15 minutes.
