Beef in Red Wine with Mushrooms

- 2 tablespoons vegetable oil
- 2 pounds sirloin steak, cut into 1-inch cubes
- 1-1/4 cups red wine
- 1 cup beef broth
- 8 ounces fresh mushrooms, sliced
- 1 bay leaf
- 1 teaspoon thyme
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- In a large skillet, heat oil; add meat and brown on all sides. With a slotted spoon, remove meat to a bowl. Add 1/4 cup of wine to the skillet; cook, stirring to remove browned bits. Pour over meat. Add remaining wine to meat. Cover and refrigerate overnight.
- Preheat oven to 325°F. Spray a 3-quart casserole with non-stick vegetable spray.
- Place meat, beef broth, mushrooms, bay leaf, thyme, salt, and pepper in prepared casserole; cover with aluminum foil or lid.
- Bake for 2-1/2 hours or until meat is tender.
