- 1/4 cup olive oil
- 1/4 cup port wine or red wine vinegar
- 4 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried marjoram
- 1/2 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1 boned, rolled rib roast (about 5 lbs)
Instructions
- Combine olive oil, wine, onion powder, thyme, marjoram, rosemary, salt and garlic powder in a small bowl and mix well.
- Rub the olive-oil mixture on all sides of the beef. Wrap the beef in aluminum foil. Chill for 8 to 10 hours.
- Preheat the oven to 325 degrees. Roast the beef, wrapped in foil, in a roasting pan for 1 hour.
- Fold back the foil and roast the beef until an instant-read thermometer inserted in center of meat registers 140 degrees for medium-rare, about 1 3/4 hours longer.
- After removing the roast from the oven, loosely cover with foil and let it rest for 15 minutes before carving. This will ensure the meat stays juicy.
