Chuck Wagon Barbecue Dinner

List of Ingredients
- 1 pound sage-flavored sausage
- 1/2 cup chopped green onion
- 1/2 cup chopped red pepper
- 2 cloves garlic, minced
- 1 (15-ounce) can black beans (rinsed and drained)
- 1 cup frozen corn, thawed
- 1 1/2 cups shredded cheddar cheese, divided
- 1 cup Hickory Barbecue Sauce
- 1 package refrigerated corn bread twists
Instructions
- Crumble sausage in pan and cook until well done, but not too brown. Drain fat and rinse with hot water in colander.
- Return to pan, add onion, red pepper and garlic. Cook and stir until vegetables are tender.
- In large bowl; mix together sausage mixture, black beans, corn, 3/4 cup cheese and barbecue sauce.
- Pour into 7- by 11-inch pan, which has been sprayed with vegetable oil. Sprinkle remaining 3/4 cup cheese over top. Separate corn bread twists. Twist each one and place in lattice design over casserole. Bake 30 to 35 minutes in 350-degree oven or until corn bread is nicely browned.
