Fajitas
List of Ingredients
- 1 lb sirloin strips or chicken strips
- 1/2 cup safflower oil
- 5 T fresh lime juice
- 3 T fajita seasoning
- 1 tsp salt
- 1 medium red bell pepper, sliced
- 1 medium green bell pepper, sliced
- 1 small red onion, sliced
- 3 green onions, sliced
- 1/2 cup fresh cilantro
- 1/4 cup cheddar cheese, shredded
- 1 pkg tortillas, warmed
Instructions
- Mix oil, lime juice, fajita seasoning and meat, and marinate for 4 hours. Drain meat from marinade, reserve.
- In heavy fry pan, heat on high 3 T marinade. Add peppers and onions, saute for 2 minutes. Remove to a platter.
- Add 1 T of marinade to pan. Add meat, stirring for 3 minutes or until cooked. Remove meat to platter.
- Pour remaining mariande into pan, cook for 1 minute. Pour over meat and peppers. Add cilantro and toss.
- Serve with cheese in tortillas.
