    List of Ingredients


    • 1 lb sirloin strips or chicken strips
    • 1/2 cup safflower oil
    • 5 T fresh lime juice
    • 3 T fajita seasoning
    • 1 tsp salt
    • 1 medium red bell pepper, sliced
    • 1 medium green bell pepper, sliced
    • 1 small red onion, sliced
    • 3 green onions, sliced
    • 1/2 cup fresh cilantro
    • 1/4 cup cheddar cheese, shredded
    • 1 pkg tortillas, warmed


    Instructions


    1. Mix oil, lime juice, fajita seasoning and meat, and marinate for 4 hours. Drain meat from marinade, reserve.
    2. In heavy fry pan, heat on high 3 T marinade. Add peppers and onions, saute for 2 minutes. Remove to a platter.
    3. Add 1 T of marinade to pan. Add meat, stirring for 3 minutes or until cooked. Remove meat to platter.
    4. Pour remaining mariande into pan, cook for 1 minute. Pour over meat and peppers. Add cilantro and toss.
    5. Serve with cheese in tortillas.


    Final Comments
