Recipe Introduction
Chimichurri is an herb sauce served with practically everything in Argentina. Although it's oil-based, it's exremely flavorful - a little dab will do you.
List of Ingredients
- 1 cup parsley leaves, about 1 bunch, stemmed
- 4 cloves garlic, roughly chopped
- 2 shallots, roughly chopped
- 1 small jalapeno, stemmed, seeded, and roughly chopped (optional)
- 3 T extra-virgin olive oil
- 2 T freshly squeezed lime juice
- 1/2 tsp crushed red pepper flakes
- 1/4 tsp ground cumin
- 1/4 tsp salt
- 1 lb flank steak
Instructions
- In a food processor, combine the parsley, garlic, shallots, jalapeno (if using), olive oil, lime juice, pepper flakes, cumin, and salt. Process the mixture with on-off bursts until the contents are coarsely chopped. Scrape down the sides of the bowl with a rubber spatula. Process the mixture a few seconds more until finely chopped.
- Transfer it to a small bowl, cover it, and let stand for at least 30 minutes.
- Grill the steak over hot coals or broil it until done as desired. Slice the steak on the diagonal and serve it drizzled with the topping.
