Grilled Spring Lamb Chops

- 8 spring lamb chops
- 4 Tbsp. olive oil
- 1 Tbsp. Dijon mustard
- 4 medium shallots
- 1 cup fresh mint
- Salt and pepper
Instructions
- Lay chops in baking dish. In bowl of food processor, combine olive oil, mustard, shallots and mint; pulse until medium-textured paste forms. Spread minty paste on each side of chops; season them with salt and freshly ground pepper. Let marinate at room temperature for 30 minutes.
- Broil or grill chops 3 minutes on each side for
medium-rare meat. Serve immediately.
