    Herb Garlic Mustard Beef Fillet

    List of Ingredients


    • 2 lb beef tenderloin
    • cooking spray
    • 1/2 tsp salt
    • 1/2 tsp black pepper
    • 3 T Dijon mustard
    • 1/2 cup fresh basil
    • 1/2 cup fresh parsley
    • 1 T fresh thyme
    • 1 T fresh oregano
    • 3 cloves garlic


    Instructions


    1. Preheat oven to 400 degrees.
    2. Place beef on broiler pan coated with cooking spray. Sprinkle with salt and freshly ground black pepper, then coat evenly with mustard.
    3. In bowl, combine chopped basil, chopped parsley, chopped thyme, chopped oregano and minced garlic. Pat evenly onto mustard coated beef.
    4. Bake 40 minutes (medium-rare). Adjust baking time for desired degree of doneness. Transfer to cutting board; tent with foil and let stand 10 minutes before slicing.
